Varietal Coffees & Blends
Green coffee has none of the taste or aroma we associate with a fine cup of coffee. It’s the heat of roasting that makes it all possible. The roasting of coffee can best be described as the caramelization of the natural sugars stored in the bean. This is what turns the raw bean from green to brown.

The roasting process is a true craft and each roaster makes certain choices about how far to develop the coffee’s sugars. A quality roaster is striving to fully develop the flavor characteristics of the bean to show off its true personality. Under roasted coffee fails to bring out the best in the coffee. Over roasted coffees mask the true personality of the bean, and even hide serious flavor faults.

LIGHT OR “CINNAMON” ROAST
Partially caramelized sugars. Mild, nutty, with a somewhat grain-like taste and a slightly sour finish.

MEDIUM OR “AMERICAN” ROAST
Further caramelized sugars. Mild, caramelly-sweet taste with still a hint of sour in the finish.

FULL OR “PEAK” ROAST
Fully caramelized sugars. This is as far as you can “push” the sugars without burning them. Stronger, more flavorful. This roast is a good balance between the bean’s sugars and acids. This is the roast we have chosen for the coffees listed below.

Guatemala Antigua “Santa Barbara”
A distinctive coffee, medium bodied, spicy-rich, delicately acidic. A truly great Antigua!

Guatemala Huehuetenango “Tres Marias”
High grown in rich volcanic soil. The flavor is uniquely sweet and satisfying. Rich yet soft.

Costa Rica Tarrazu “La Minita”
No coffee receives more attention and care in its cultivation and preparation. This coffee is perhaps the finest coffee in the world. Zesty, bright, full bodied, deep, clean taste. A very rare treat. Check it out.

Sumatra Mandheling “Pawani”
Sumatra’s best. Heavy bodied, deep, slight musty undertone. An exotic, bold coffee.

New Guinea “Arona”
New Guinea’s finest estate grown coffee. This coffee is full bodied, with a deep almost smokey taste. Our roaster’s favorite!

Guatemala Co2 Decaf
More flavor than the strictly water processed decafs, and uses no harmful solvents. This decaf fools many people. Try it on your guests. You’ll all agree it’s the best decaf coffee you’ve ever tasted.

Budget Gourmet
Each year we search for good solid coffees to roast that should cost more. Like that good bottle of chardonnay you found for six dollars a bottle! The growing regions we pick from may vary throughout the year, but you can always count on flavorful, fresh roast coffee at a bargain price. At times this coffee is a straight varietal and other times it’s a blend. Great for the budget minded restaurants too!

Premium Estate Blend
A unique blend of our finest estate grown coffees. Complex and distinctive. Medium heavy body. The choice of many fine restaurants and bed and breakfast inns. We’re very proud of this one.
